Classic Sangria (Serves 4–6)

Ingredients
1 bottle dry red wine (Spanish Tempranillo works beautifully)
¼ cup brandy
2 tablespoons orange liqueur (optional)
2–3 tablespoons sugar or honey (to taste)
1 orange, sliced
1 lemon, sliced
1 cup cherries or berries
A small splash of sparkling water (just before serving)

Method
Combine wine, brandy, liqueur, and sweetener in a pitcher. Add fruit and stir gently. Cover and refrigerate for at least 2 hours — longer if time allows.
Just before serving, add a splash of sparkling water for lift. Pour over ice and enjoy slowly.

3 cups red grape juice or pomegranate juice
1 cup freshly squeezed orange juice
1 cup sparkling water
1 orange, sliced
1 lemon, sliced
1 cup berries or cherries
A splash of balsamic reduction or verjus (optional, for depth)

Combine juices and fruit in a pitcher. Chill until ready to serve. Add sparkling water just before pouring.
