Night of a Thousand Lanterns

Chiang Mai, Thailand

Warm Teakwood • Sweet Mango • Bright Lemongrass

As dusk settles over Chiang Mai, the air softens and the city begins to glow from within. Warm teakwood breathes through open courtyards while the sweetness of ripe mango lingers on your fingertips, carried from shared plates and quiet laughter. Lemongrass drifts through the night like a passing thought—bright, fleeting, alive.

Along the river, hands lower small offerings into the water, each one holding a wish. Lanterns lift gently into the sky, rising one by one until the darkness is stitched with light. For a moment, time loosens its grip. The world feels hushed, reverent—held between earth and sky.

Light the candle.

Recipe — Mango Sticky Rice

A lantern-lit ritual for a quiet evening.

Sweet mango, warm coconut, and tender rice — a simple dessert often shared during Chiang Mai’s evening celebrations. Enjoy it slowly, letting the sweetness linger like a wish set gently into the night.

—————

Ingredients (serves 2–3)

1 cup glutinous (sweet) rice

1 cup full-fat coconut milk

⅓ cup sugar (white or coconut sugar)

¼ tsp salt

1–2 ripe mangoes, sliced

Optional: toasted sesame seeds or coconut flakes

—————

Prepare the rice

Rinse the rice until the water runs clear.

Soak for at least 30 minutes (up to 2 hours if you have time).

Steam the rice (preferred) or cook according to package directions until tender and sticky.

—————

Make the coconut sauce

In a small saucepan over low heat, warm the coconut milk, sugar, and salt.

Stir gently until the sugar dissolves.

Do not boil — it should be warm and silky.

—————

Bring it together

Place the hot rice in a bowl and pour about ¾ of the coconut sauce over it.

Cover and let it sit for 10 minutes, allowing the rice to absorb the sweetness.

—————

Serve

Spoon the rice onto a plate.

Add fresh mango slices.

Drizzle with the remaining coconut sauce and sprinkle with sesame seeds or coconut, if using.

Enjoy!
